Instant Pot Beef and Vegetable Soup

A healing and restorative soup meant to nourish your gut with grass-fed ground beef, vitamin rich kale, and warming broth.

Hi Everyone,


It has been a busy week full of good things and especially, good food! My mom and I have been consuming lots of soup and it has been intentional! It's something about nourishing bone broth or meat stock, or plain old broth that is so satisfying. How it heals the gut, gives your skin a beautiful glow and "clearness", makes you start to feel whole again... God is beautiful. We, sometimes, can mess up the precious, intricately designed bodies that He gave us, but God is faithful, according to His will, to heal and restore us; He doesn't have to, but when He does, boy, am I so thankful and excited! I get my pen, paper, computer, and exclaim, "Let's do this, God!" And, oh, also, how He created herbs and a variety of foods, some we know nothing of that are out there, that He knew would help heal and restore His creation should things happen that are either out of His will or simply, life.


Which leads me to...


I want to share with you all a series, Healing and Restoration that has recipes focused on just that! It's an exciting series and I hope it blesses you.


Psalm 85:1-13

"Lord, You have been favorable to Your land; You have brought back the captivity of Jacob. 2 You have forgiven the iniquity of Your people; You have covered all their sin. Selah 3 You have taken away all Your wrath; You have turned from the fierceness of Your anger.

4 Restore us, O God of our salvation, And cause Your anger toward us to cease. 5 Will You be angry with us forever? Will You prolong Your anger to all generations? 6 Will You not revive us again, That Your people may rejoice in You? 7 Show us Your mercy, Lord, And grant us Your salvation.

8 I will hear what God the Lord will speak, For He will speak peace To His people and to His saints; But let them not turn back to [a]folly. 9 Surely His salvation is near to those who fear Him, That glory may dwell in our land.

10 Mercy and truth have met together; Righteousness and peace have kissed. 11 Truth shall spring out of the earth, And righteousness shall look down from heaven. 12 Yes, the Lord will give what is good; And our land will yield its increase. 13 Righteousness will go before Him, And shall make His footsteps our pathway."


This soup is so warming (as many soups are) and has a mildly seasoned broth for those who need easy foods for their gut. I would've used a cut of beef with bones, but I just had ground beef on hand (it worked just fine!). I also didn't have broth BUT the beef with prayer made a delicious, simple broth.


INGREDIENTS

-Grass-fed ground beef with the perfect amount of fat, I don't do low fat products and they don't do me

-Kale (mixture of curly and dinosaur)

-1 whole medium onion, cut the pieces how you wish

-6-8 large cloves of garlic, smashed and sliced

-Peppers (green, yellow, and red- whatever you have on hand)

-Frozen corn

-Half of large can of organic tomato sauce or some you have canned, adds flavor and depth to water broth

-Water, to act as the broth

-Garlic and Herb Seasoning, add 3 tablespoons

-Avocado Oil


INSTRUCTIONS

In your Instant Pot, press the Sautee function and add in avocado oil and heat (remember, ground beef produces a lot of oil, so use just enough). Once hot, add your onions. Once they're midway done, add in your garlic. When fragrant, add ground beef and break apart. When beef is midway done, add in your spices. Feel free to add in different kinds of spices or less, depending on what your body can handle. When it just becomes done, add in your peppers, kale and sautee for 6 minutes. Pour in your tomato sauce, water, corn. I add just enough water where I know the soup will be "brothy", but still have just the right amount of sustenance. Pressure cook the soup for 13 minutes and set valve to Seal (the pressure setting on my IP is already set on High, but if yours isn't, please set!) Once done, you can either let it naturally release or release it immediately. Serve up and enjoy!
